Our lettuce is a special type of sweet, leaf lettuce called Salanova. Farmers love Salanova lettuce because it grows like a head lettuce and cuts like a leaf lettuce. Most farmers cut the leaves in the field and let it grow back for a second harvest. But it takes a lot of time, labor and plastic packaging to do this. Instead we harvest and sell the small heads whole, thereby avoiding plastic packaging all together. 
 
 
When you take your lettuce home, hold it upside-down by the stem over a bowl. Cut one inch from the stem and let the leaves fall into the bowl. Wash with cold water and enjoy.
